Did you mean to overblow the roses?
What colour were they really?

So much to learn, and so little time.
The roses were yellow. I set the aperture and shutter on the camera for DOF and a normal colour balance. Used the gimp to desaturate the colour image and used curves and contrast to finish it off.
Apart from the original image I saw by megasaurus, I was thinking of the B&W effect in the 'Every breath you take' video (the Police original).
